Brussels sprouts – winter vegetables

Brussels sprouts are a vegetable that belongs to the cruciferous family. It is harvested in winter from September to January and is best cooked immediately. After the first frost, it loses the bitter taste and tastes nutty. The vegetable is suitable as a low-calorie side dish to various fish and meat dishes.

Brussels sprouts have their home in Belgium

In 1587, we find the first evidence of cultivation in Belgium. Here it was called “Choux de Bruxelles” and in our country it became known as “Brussels sprouts”. Since the beginning of the 19th century, it became known throughout Europe and the United States as a winter vegetable and entered the menu.

Vitamin C donor in winter

The vegetable consists of over 80 percent water and also contains fat, protein and carbohydrates. It is rich in vitamins C, K and E and the B vitamins, potassium, magnesium, zinc, manganese, phosphorus and contains a lot of fiber. When consumed regularly, it is said to reduce the risk of cancer by stimulating the metabolism.

The florets are the size of a walnut

The vegetables are bought fresh at the weekly market or supermarket. Most often it is packaged in nets. When buying, make sure that the leaves are tightly closed, and the stalk should have a bright cut surface. It is best not to store it for a long time, and if it is, then not together with apples, plums or tomatoes. It will keep for up to four days wrapped in a plastic bag in the crisper. Brussels sprouts are also offered frozen, all year round. This is just as easy to process and already cleaned, besides frost does not harm the vegetables.

Before preparing as a vegetable should remove the outer leaves, and then stew the vegetable for five to ten minutes. Now season it with butter and freshly grated nutmeg, add fried onion and bacon cubes if necessary. Or it is baked with cheese for a few minutes in the oven. To casseroles and soups it is pureed.

The vegetable is suitable for weight loss

Brussels sprouts do not have many calories and are good for weight loss. It provides important winter vitamins and minerals and is said to have a calming effect on the nerves and relieve states of weakness. It helps with constipation and high blood pressure and lowers cholesterol levels. It also prevents arteriosclerotic changes.
